1001 Low Fat Vegetarian Ingredients:
1/2 cup chopped onion |
1 garlic clove |
2 teaspoons curry powder |
1 teaspoon crushed coriander seed |
1 teaspoon crushed cumin seed |
1/2 teaspoon ground turmeric |
1/4 teaspoon crushed red pepper flakes |
1 tablespoon olive oil |
5 cups vegetable stock |
4 cups water |
2 cups dried lentils, sorted and rinsed |
salt and pepper |
6 tablespoons plain fat-free yogurt |
Directions:
1. Sauté onion garlic, herbs and red pepper in oil in large saucepan until onion is tender, about 5 minutes; stirring frequently. 2. Add stock, water and lentils; heat to boiling. 3. Reduce heat and simmer, covered, until lentils are tender, about 30 minutes. Season to taste with salt and pepper. 4. Pour soup into bowls; garnish each with a tablespoon of yogurt. |
