Something I made up because I needed a lunch for work, and didn't want to go to the store. I'm sure its not in any way authentically Indian, but it tasted pretty darn good! :) Ingredients:
1/4 cup lentils (dry) |
1/2 carrot, sliced |
1/2 medium onion, diced |
1 cup chicken stock (optional, use vegetable stock if vegetarian) |
1 tbsp curry powder |
1/2 tsp red pepper flakes |
1 tbsp evoo |
dollop of nonfat yogurt (optional) |
Directions:
1. In a medium pot, cook carrot and onion in EVOO for 2-5 mins, or until the onion is somewhat translucent and carrot is slightly soft 2. Add the rest of ingredients, bring to boil, reduce to simmer, and simmer, covered, for 45 minutes, until lentils are fully cooked 3. Add dollop of yogurt, if desired, and enjoy. |
