This is my adaptation of a delcious appetizer salad I had a local Indian restaurant, I hope you enjoy it. The salad is moist but not overly wet from the dressing. Great with Naan bread and an Indian soup Ingredients:
1 can of chickpeas rinsed and drained |
assorted greens |
red, and green medium diced bell pepper, quantity as you desire |
white onion medium diced. quatity as you desire |
dressing |
tamarind juice ( available at indian grocers and gourmet food stores ) |
yoghurt |
Directions:
1. Mix a small amount of the tamarind juice ( say 1/4 cup ) with a perhaps a Tbs or two of yoghurt. 2. Dressing should be thin and liquidy and still taste sweet and not over powered by the yoghurt 3. Mix together the chickpeas, assorted greens, bell peppers and onions and toss with the dressing. 4. Place on a salad platter 5. One can make and have extra dressing on the side for guests as well as salt and pepper if desired. 6. Nice with soup and Indian bread |
