This is an awesome way to eat carrots. Such a wonderful and refreshing taste when you are in the mood for something different. Enjoy Ingredients:
1 tablespoon corn oil |
1 tablespoon lime juice |
1/2 teaspoon ground cumin |
1/2 teaspoon cinnamon |
1/4 teaspoon salt |
1/2 teaspoon minced garlic |
4 cups carrots sliced and cooked |
1/2 cup cooked wheat berries |
Directions:
1. Whisk oil and lime juice together in large bowl then whisk in cumin, cinnamon, salt and garlic. 2. Stir in carrot then cover and refrigerate until cold. 3. Serve chilled garnished with wheat berries. |
