A delicious Indian dessert, the only way I'll eat carrots.
Ingredients:
2 lbs carrots
1 cup sugar
3 tbs butter
1/2 cup fat free evaporated milk
3/4 cup light ricotta cheese
1/2 cup pistachios
Directions:
1. Grate carrots. Put in large pot with butter and cook 15-20 minutes, stirring.
2. Add milk, ricotta, and sugar and cook about 30 minutes, uncovered.
3. Stir in pistachios and serve.
