A delicious Indian dessert, the only way I'll eat carrots. Ingredients:
2 lbs carrots |
1 cup sugar |
3 tbs butter |
1/2 cup fat free evaporated milk |
3/4 cup light ricotta cheese |
1/2 cup pistachios |
Directions:
1. Grate carrots. Put in large pot with butter and cook 15-20 minutes, stirring. 2. Add milk, ricotta, and sugar and cook about 30 minutes, uncovered. 3. Stir in pistachios and serve. |
