Incredibly Creamy Clam Chowder |

A fantastic spin on typical clam chowder, this recipe is soo creamy and warms the belly. You would never guess the secret ingredient is cauliflower! Ingredients:
1 tablespoon butter |
1 onion, chopped |
1 stalk celery, chopped |
1 medium cauliflower, cut in chunks |
1 cup oats |
1 teaspoon oregano |
1 pinch cayenne (to taste) |
6 cups chicken bouillon |
2 (6 1/2 ounce) cans minced clams, undrained |
salt & pepper, to taste |
Directions:
1. Melt butter in pot, brown onion and celery. 2. Add cauliflower, oats, oregano, cayenne, bouillon and salt and pepper. 3. Bring to a boil. 4. Reduce heat and simmer for 60 minutes, uncovered, stirring occasionally. 5. Using a blender (or hand blender) puree until smooth. 6. Stir in chopped clams. 7. Warm, do not overcook or clams will get rubbery. 8. Adjust seasoning to taste. |
