Originated from a Junior League cookbook, but now slightly modified. The soda water makes the waffles incredibly light and airy, crispy on the outside. Best made with Belgium waffle iron. Serve with butter, maple syrup and a sprinkle of powdered sugar. Ingredients:
2 cups baking mix |
1/2 cup vegetable oil |
1 egg, beaten |
1 (10 ounce) bottle soda water |
Directions:
1. Combine first 3 ingredients. 2. Stir well and add club soda. 3. Bake about 5 minutes in waffle iron, or until steaming stops. |
