Incredible Chevre Cheesecake |

It a side dish that looks like a cheesecake. Easy to make and is nice with lamb, seafood or other light summer foods. Nice for a buffet table or even as an appetizer with a crisp, slightly fruity white wine. Ingredients:
crust |
1 tablespoon butter |
8 ounces ground breadsticks |
1 cup butter |
1/2 teaspoon salt |
filling |
2 lbs. fresh chevre, room temperature |
1 lb cream cheese, room temperature |
3 medium eggs |
1 tablespoon fresh basil, fresh rosemary, fresh thyme, fresh dill weed or any herb you enjoy. |
receipe can be half. use smaller springfoam pan. |
Directions:
1. For the crust: 2. Coat a 9 springform pan with 1 tablespoon of butter. 3. Mix ground breadsticks and butter. Reserve 2 tablespoons. 4. Press mixture into the bottom and around the sides of the springform pan. 5. Chill for 30 minutes. 6. For the filling: 7. Preheat oven to 375. 8. Combine cheeses, egg and herbs. 9. Beat with mixer at medium speed for about 10-15 minutes. 10. Pour or spoon into the chilled crust. 11. Reduce temperature to 325 and bake about 45 minutes or until browned and slightly puffed. Toothpick should come out pretty clean. 12. Remove from oven and bring to room temperature. 13. Release pan. 14. Serve sliced into wedges with a sprig of fresh herbs. 15. It's like being in the south of France again. |
