An exceptional and delicious recipe. Fill center with peas or any vegetable to your liking. Ingredients:
1 cup butter |
1/2 cup brown sugar |
1 cup flour |
1 1/2 cups grated raw carrots, drained |
2 eggs, separated |
1 tablespoon lemon juice (optional) |
1 tablespoon water |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1 teaspoon salt |
1 teaspoon cinnamon |
1/4 teaspoon nutmeg |
Directions:
1. Cream butter and brown sugar. 2. Add carrots, egg yolks, lemon juice, and water. 3. Sift dry ingredients and then add. 4. Fold in stiff egg whites. 5. Put into a greased ring mold, spread with bread crumbs. (optional). 6. Place in refrigerator overnight. This mellows the flavor. (optional). 7. Remove from the refrigerator 1 hour before baking.(optional). 8. Bake at 350 degrees for 15 minutes, then 375 degrees for 30 minutes. |
