A BBQ restaurant in Reno served these and they had the recipe available so I grabbed it. Really good with a juicy cheeseburger and some potato salad. Ingredients:
1 pound bag dried pinto beans, soaked overnight in water to cover. |
1/2 cup packed brown sugar |
1 1/4 cups bbq sauce (your favorite) |
1 tbsp prepared mustard |
1 heaping tbsp chili powder |
1 cup chopped onions |
1/2 pound smoked bacon |
Directions:
1. Drain the beans. Add the drained beans to a large saucepan and cover with fresh cold water. Bring the water just to a boil. Reduce the heat to low and simmer the beans until tender. Drain the beans well. 2. Saute onions with the bacon until onions are done and bacon cooked. 3. To the drained beans in the saucepan, add the remaining ingredients and mix well. Heat over medium low heat ( with lid) until the flavors are blended and the mixture is hot throughout approximately 1 hour. |
