This is such a simple dish that I thought it needed a fancy name to help it out; so quick and easy pasta salad became Incalata con Pasta Rapido y Facile. Read more . So pop the 5 lb package of mince you have in the freezer into the microwave to thaw so you can make hamburgers and make up a batch of Incalata con Pasta. I decided to get even with the last mob that did this to me by dropping by their place un-announced at super time but they were having TV Dinners; figures. A word of warning: Use only top quality, just barely blanched frozen veggies for this. The crisp, almost raw veggies make this dish.
Ingredients:
the salad
• 1 lb uncooked pasta. i usually use three color rotini but any short pasta type will do.
• 2 – 3 cups frozen mixed veggies, to taste. i use the carrot, green bean, pea and corn mix.
• 2 – 3 tbs chopped ripe olives, to taste.
• 2 – 4 sliced fresh mushrooms, depending on size.
the dressing
• 1 cup real mayonnaise.
• 1 tsp dijon mustard, to taste.
• 2 tbs dry white wine or vinegar, to taste.
• a pinch of sweet basil.
• a sprig of cilantro, chopped.
• 1 tsp chili powder, to taste.
• salt and fresh ground pepper to taste.
Directions:
1. 1. Cook the pasta just al dante, rinse with cold water and drain
2. 2. Mix all of the Dressing ingredients together until smooth and creamy.
3. 3. Mix all of the salad ingredients and the dressing in a large bowl and toss until well mixed.
4. You can garnish this with a few sprigs of parsley or cilantro.
