Quick but yummy potato bake, great for Roasts, Bar-B-Q's, fish, or with just a serve of greens Ingredients:
3 potatoes, large |
2 sweet potatoes med. size |
1/2 butternut pumpkin |
3 garlic corms(whol garlic) |
600ml cream |
salt; pepper to taste |
2cups tasty cheese, grated |
Directions:
1. Pre-heat oven to 180deg C 2. Peal and cut vegetables to bite size peices 3. steam in microwave till soft, time will depend on the oven, 4-5 min. 4. While veg is steaming, put whole garlic in small pan , with a little olive oil, cook slowly until soft, with lid on.You will know when cooked by the smell, sugary. approx 10 to 15min 5. squeeze the garlic to extract the pulp., If you dont want to go to all this trouble, you can just use crushed garlic, about 3 fat cloves 6. In an oven proof dish place the drained veg, the garlic, cream,( you may not use all the cream, but you need enough tocover toe veg), a little fresh ground pepper, salt if you like, top with cheese. 7. Place in a preheated oven 180deg C for approx. 25-30min, or until the cheese is golden.. 8. Great as a bring a plate to a party, Barby, or picnic, as it transports easily. 9. enjoy. |
