From the Suzanne Somers Fast & Easy cookbook Ingredients:
2 tablespoons olive oil |
1 lb top round beef, or sirloin steak sliced into 1/4-inch-thick pieces |
1 medium onion, chopped |
1 bell pepper, chopped |
1 (14 ounce) can diced tomatoes |
2/3 cup sugar-free mild curry paste or 1/2 cup sugar-free hot curry paste |
3/4 teaspoon artificial sweetener |
1/2 cup heavy cream |
Directions:
1. Place a large saute pan over medium-high heat. 2. When hot, add olive oil and beef. 3. Saute for 2 to 3 minutes until browned. 4. Remove steak from pan and set aside. 5. Add onions to pan and cook 2 minutes. 6. Stir tomatoes, curry paste, SomerSweet and heavy cream. 7. Broil to a boil, reduce heat, and simmer for 10 minutes. 8. Return steak to pan and simmer for 5 minutes. 9. Serve hot. |
