Here in Japan I am finding things to make that are just for me - you know, single serving dishes, maybe with left-overs for lunch. I threw this together tonight and it was really yummy! Ingredients:
2 tbsp. olive oil |
2 boneless, skinless chicken breasts, cubed |
1 small onion chopped |
1 stalk celery with leaves, chopped |
1 large carrot chopped |
2 potatoes cubed |
1/2 tsp. thyme |
1/2 tsp. basil |
1/2 tsp. oregano |
2 tbsp. soy sauce |
hot sauce to taste (i used habanero, it's got a nice flavor and good kick) |
1 1/2 cups water |
1 can (12 oz.) beer (i used asahi, a japanese beer - really good!) |
salt and pepper to taste |
Directions:
1. In a hot skillet, heat olive oil. 2. Saute onions until browned. Add soy sauce to de-glaze the pan. 3. Add chicken and cook until done. 4. Add spices, celery, carrot and beer. Cook about 20-30 minutes. 5. Add potatoes and water. 6. Cook another 30 or so minutes until thick and rich. 7. Serve with a nice bread and real butter! |
