Impossibly Delicious and Kinda Healthy Brownies |

These moist, rich chocolately brownies are wonderful. But they are made with whole wheat flour, baby food, and Splenda, so they are on the healthy end of the brownie spectrum. I won't call them a health food, but you don't have to feel too guilty while you enjoy one (or two...) I've used 100% Splenda, and they still turn out great! Ingredients:
4 ounces baby food (apple or plum or prune works best) |
2 tablespoons margarine |
2 teaspoons vanilla |
1/2 cup unsweetened cocoa |
1/2 cup sugar |
1/2 cup splenda sugar substitute |
1/4 teaspoon salt |
2 eggs |
1/2 cup whole wheat flour (can use whole wheat pastry flour) |
1/2 cup chocolate chips |
1/2 cup pecans or 1/2 cup walnuts |
Directions:
1. Preheat oven to 350. 2. Combine baby food, margarine, vanilla and cocoa until well blended. 3. Add sugar, Splenda and salt. 4. Add eggs one at a time. 5. Mix in flour, chocolate chips and chopped pecans or walnuts until just mixed. (Don't overmix.). 6. Pour into 8x8 greased pan. 7. Bake for 25 minutes. |
