HE recipe to use up zucchini crop Ingredients:
2 1/2 cups zucchini, chopped |
1 cup tomato, chopped |
1/2 cup onion, chopped |
1/4 cup parmesan cheese |
1 cup buttermilk, fat free |
3/4 cup bisquick, heart smart |
1 egg |
1/4 cup egg substitute |
1 tsp. dried basil |
1/2 tsp. garlic powder |
Directions:
1. Preheat oven to 400. Spray deep dish pie dish with nonstick spray. Layer vegetables in dish. In a blender, combine remaining ingredients, processing on HIGH until smooth, about 30 seconds. Pour over vegetables. Bake 35-40 minutes or until set. Cool 5 minutes before cutting. |
