Impossible-To-Fail Quiche |

This economical and easy recipe is a superb vehicle for the delicious flavours and full-volume taste. Ingredients:
1 onion, finely chopped |
1/2 cup mushroom, sliced |
2 slices bacon, rind removed and chopped |
3 eggs |
1/2 cup self-raising flour |
1 cup edam cheese, grated |
1 tablespoon oil |
1 tablespoon fruit chutney |
1 1/4 cups skim milk |
2 tablespoons parsley, chopped |
1/3 broccoli, sliced into thin pieces |
Directions:
1. Preheat the oven to 180°C. 2. Place the chopped onion in a frying pan with a little oil. 3. Cook gently for a few minutes, then place the mushrooms and bacon in the pan and cook for a few minutes until softened. 4. Place all remaining ingredients (except broccoli) into a large bowl and whisk, or into a large food processor bowl and whirl for 30 seconds. 5. Add cooked onion and mushroom mix, then the broccoli. 6. Pour into a hot, greased 23cm quiche dish and bake for 45 minutes. 7. Serve with salad and crusty bread. |
