Impossible Ratatouille Pie |

Got this from a friend who says she got it off a Bisquick box long ago. Ingredients:
olive oil |
1 cup zucchini, chopped |
1 cup eggplant, chopped |
1/2 cup tomato, chopped |
1/2 cup green pepper, chopped |
1/2 cup onion, chopped |
1 clove garlic, finely chopped |
1/2 tsp. thyme |
1/2 tsp. basil |
1 cup mozzarella cheese, grated |
1 1/4 cup milk |
1/4 cup sour cream |
3/4 cup bisquick |
3 eggs |
Directions:
1. Preheat oven to 400 2. Heat oil in saute pan 3. Add next 7 ingredients and saute until slightly tender 4. Mix milk, sour cream, Bisquick, and eggs until blended 5. Put sauteed veggies into 9 in. pie plate 6. Sprinkle cheese over top of veggies 7. Pour Bisquick mixture into pie plate 8. Bake for 30 minutes |
