I don't like pie crust and started making this years ago! It's now a staple at our Thanksgiving dinner! Ingredients:
2 small cans or 1 large can pumpkin pie mix - not the 100% pumpkin (i use libby's) |
1 c sugar |
1 c bisquick baking mix |
1 - 5 oz can evaporated milk |
2 eggs |
Directions:
1. Mix all ingredients together in a large bowl until well blended. 2. Pour into a sprayed 9x13 baking dish or 2-3 sprayed pie plates.* 3. Bake in preheated 425°F oven for 15 minutes. Reduce temperature to 350°; bake 50 to 60 minutes or until knife inserted near center comes out clean. 4. *For shallow pies, bake in preheated 425° F. oven for 15 minutes. Reduce temperature to 350° F.; bake for 40 minutes or until pies test done. 5. Pie will form it's own thin pumpkin crust on the bottom and edges!! 6. Cool and serve with whip cream. 7. YUMMY!! |
