Impossible Pie - Ham And Cheese

The best way to have breakfast already prepared in the morning - just heat a slice in the microwave. This is a use whatever you got in the fridge recipe!
Ingredients:
2/3 cup cheese
2/3 cup ham
1/3 cup green onions minced
spinach or brocolli thawed
5 eggs
1 1/2 cups liquid
2 t oil
2/3 cup baking mix

Directions:
1. Mom says that Impossible Pies started up in the 70's - you just throw a bunch of stuff in the pan and they make their own crusts! We use Bob's Red Mill gluten free flour or Pamela's Baking wheat free baking mix. If you don't have a mix add 1t baking powder, 1/4t baking soda, and salt to the flour. Everything is optional in this recipe - yeehaw! We use rice milk - but milk or water will work fine. I like to use parmesean with the ham - just enough for the flavor and cuts down on the dairy. Try leeks or onions sauteed instead of green onions. Thaw the spinach or brocolli under water.
2. Put cheese, ham, veggies straight into a pie dish or 8x8 brownie pan.
3. Mix everything else together - including the baking mix!
4. Bake 35 - 40 minutes in preheated 400 degree oven.
