This is so simple, and really fun for kids to make. It comes from one of my favourite cookbooks, Classic Country Cooking by Lady Flo Bjelke-Peterson. In cooking, the flour settles to form a crust, the coconut rises to form a topping, and the centre becomes an egg custard filling. It's just great! Ingredients:
4 eggs |
1/2 cup plain flour |
1 cup sugar |
2 teaspoons vanilla extract |
1/2 cup butter |
2 cups milk |
1 cup desiccated coconut |
Directions:
1. Mix all ingredients together in a large bowl. 2. Pour the mixture into a 26cm greased pie plate. 3. Bake at 180C for 1 hour, or until th ecentre is firm. |
