I came across this recipe in the Bisquick Cookbook. Ingredients:
2 cups zucchini, chopped |
1 cup tomato, chopped |
1 cup swiss cheese, shredded |
1/3 cup onion, chopped |
2 cups milk |
4 eggs |
1 cup bisquick baking mix |
1/3 cup grated parmesan cheese |
1/4 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Preheat oven to 400 degrees. 2. Grease pie plate. 3. Sprinkle zucchini, tomato, Swiss Cheese and onion in plate. 4. Beat in remaining ingredients 15 seconds in blender on high or 1 min with a hand beater or until smooth. Pour into plate. 5. Bake 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Garnish with tomato slices and succhini slices if desired. |
