This is my grandma's favorite pie, she requests that I make it often. It is a custard type pie. During baking, the flour sinks to the bottom to make a crust! What could be easier? :) Ingredients:
4 eggs |
1 cup sugar |
1/4 cup butter, softened |
1/2 cup flour |
1/4 teaspoon salt |
1/2 teaspoon baking powder |
2 cups milk |
1 cup shredded coconut |
1 teaspoon vanilla |
1/8 teaspoon ground nutmeg |
Directions:
1. Preheat oven to 350 degrees F. 2. Put all ingredients in a blender. 3. Blend until all ingredients are well blended. 4. Pour mixture into a 10-inch, slightly greased, pie pan. 5. Bake for 1 hour. 6. May be eaten warm, but refrigerate any leftovers. |
