This filling is great the next day in omelets too. Ingredients:
1 roasting chickens, boiled and deboned or 2 chicken breasts, cooked and shredded |
1 celery, chopped |
1 onion, chopped |
1 green pepper, chopped |
1 red pepper, chopped |
1 (4 ounce) can sliced olives |
1/2 cup chicken broth |
salt |
pepper |
monterey jack cheese |
lettuce |
tomato |
sour cream |
green chili salsa |
Directions:
1. Place all ingredients in a sauce pot and simmer together; simmer until some of the liquid drains off. 2. Place a scoop of mixture either into a soft tortilla or a hard shelled taco, add toppings and eat! |
