Ingredients:
1 1/4 cups flour
1 egg
1/4 cup sugar
1 1/4 cups buttermilk
1/4 cup oil
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon vanilla
Directions:
1. Preheat a skillet or griddle over medium high heat. Use non-stick spray to ensure they don't stick to the skillet.
2. In a blender, combine all the ingredients in a blender or you can use a mixer.
3. Laddle about 1/3 of the batter onto the hot skillet, making about 5 inch circles.
4. Cook each side for about 2 minutes each. Serve hot.
