This savoury cakes melt in your mouth , the minute you take a bite . They are usually two to three inches in diameter and are made by steaming a batter consisting of fermented black lentils (de-husked) and rice. Read more . Can serve with almost any accompaniments. Ingredients:
3 c parboiled rice , soaked for 4 hours |
1 c split black lentil , soaked for 4 hours |
pinch of salt and baking soda |
Directions:
1. The lentils and rice are grounded to a paste with little water one by one 2. Add salt and allow the batter to ferment overnight , until it expands to almost double its original volume. 3. In the morning, add the soda and use a big spoom to scoop the idli batter into the oil -greased moulds of an idli tray for steaming. 4. After 5 mins insert a toothpick to see if it comes out clean . 5. Remove and serve with almost anything even honey . |
