From Theresa Goble, Muscatine, OH and found in TOH Heartwarming Soups. I haven't tried this one yet but it sounds interesting. The four hours prep time is chill time. Ingredients:
2 cups plain yogurt |
2 (10 1/2 ounce) cans condensed chicken broth, undiluted |
2 (2 1/4 ounce) cans sliced ripe olives, drained |
1 cup coarsely chopped cucumber |
1/2 cup chopped green onion |
1/2 cup chopped green pepper |
1/2 cup sliced pimento stuffed olive |
1/8 teaspoon white pepper |
seasoned croutons (optional) |
Directions:
1. Stir yogurt in a large bowl until smooth. Add chicken broth again whisking until smooth. Stir in the olives, cucumber, green onion and green pepper. Season with white pepper and refrigerate, covered, for 4 hours. 2. Garnish with croutons as you wish just before serving. |
