A fantastic start to a light warm weather meal, especially outdoors. Ingredients:
2 lb peeled, seeded, chopped ripe tomatoes |
1 c chicken stock |
1/4 c extra virgin olive oil |
1/3 c aged wine vinegar |
1 clove crushed garlic |
salt & pepper |
4 tsp thick creme fraiche |
12 small fresh basil leaves |
Directions:
1. Place the tomatoes, stick, oil, vinegar, garlic, salt and pepper in a food processor. 2. Process on high for 2 minutes, or until smooth. 3. Refrigerate until ready. 4. Serve topped with a teaspoon of creme fraiche and some basil leaves. |
