Cool and refreshing beverage I developed to make use of the fresh mint I planted this summer. In memory of summer afternoons with Aunt Pat in Waco, TX. Ingredients:
4 cups boiling water |
1/3-1/2 cup fresh mint leaves, crushed |
4 tablespoons granulated sugar |
2 tablespoons fresh lemon juice |
4 tea bags |
1 -1 1/2 cup peach nectar (to taste) |
fresh mint sprig, for garnish |
Directions:
1. Crush mint leaves with sugar and lemon juice; pour boiling water over mint leaves and tea bags. 2. Let steep to desired taste; drain tea bags. 3. Mix in peach nectar. 4. Pour over ice in tall glasses and garnish with fresh mint. |
