This recipe came from the Knoxville News-Sentinel, from a recipe sharing column. These cookies are similar to the ones sold at Ham 'n Goodys, a favorite local eatery. Ham 'n Goodys' lemon cookies are famous in Knoxville. Ingredients:
3 cups unsifted flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1 cup butter or 1 cup margarine, softened |
1 cup sugar |
1/3 cup reconstituted lemon juice |
1 1/4 cups confectioners' sugar |
2 tablespoons reconstituted lemon juice |
Directions:
1. Sift flour, baking powder and soda into large bowl. 2. Beat butter and sugar. 3. Gradually add dry ingredients and lemon juice to sugar mixture. 4. Chill dough 1 hour. 5. On floured surface, roll half of dough to 1/8-inch thickness. 6. Cut cookies out. 7. Place on ungreased baking sheets and bake at 400 degrees for 7-9 minutes. 8. Glaze:. 9. Mix sugar and lemon juice together. 10. Once cookies have cooled, top with glaze. 11. Let set before eating. |
