Entered for safe-keeping. From Deborah Madison's This Can't Be Tofu! . Variations: a pinch of cinnamon or nutmeg; vanilla; hazelnut or almond syrup; chocolate syrup; coconut milk; a big scoop of vanilla ice cream or frozen yogurt; a banana. Cooking time is blender time. Ingredients:
1 cup strong coffee or 1 cup espresso |
1/2 cup soymilk |
1/3 cup soft silken tofu |
3 ice cubes |
1 teaspoon vanilla |
1 tablespoon brown sugar or 1 1/2 teaspoons splenda sugar substitute, brown sugar blend |
Directions:
1. Combine everything in a blender and puree until smooth. |
