Ingredients:
vegetable cooking spray |
1/4 cup all-purpose flour |
1/2 teaspoon baking powder |
1/4 cup sugar |
1/4 teaspoon ground cinnamon |
3 tablespoons frozen egg substitute, thawed |
1 tablespoon water |
1 1/2 teaspoons vegetable oil |
1 teaspoon vanilla extract |
1/4 cup mashed ripe banana (about 1/2 small banana) |
2 tablespoons sifted powdered sugar |
2 teaspoons neufcha gtel cheese, softened |
1/4 teaspoon skim milk |
Directions:
1. Coat 2 (4- x 2 1/2- x 1 1/4-inch) loafpans with cooking spray; set aside. 2. Combine flour and next 3 ingredients in a bowl. Combine egg substitute, water, oil, and vanilla, stirring well with a wire whisk. Stir in banana. Add banana mixture to dry ingredients, stirring just until dry ingredients are moistened. Spoon batter into prepared pans. Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove from pans. Let cool completely on a wire rack. 3. Combine powdered sugar, NeufchaGtel cheese, and milk, stirring well. Spread evenly over tops of cakes. |
