I clipped this from The Scottsdale Living Newspaper; it's a heritage recipe. It comes from a three-generation Arizona family (Olson) and dates back to WWII. I thought the use of Ice Water, was interesting The Cool Whip Frosting recipe is Vanilla Cool Whip Frosting.. Ingredients:
1/2 cup shortening |
2 cups sugar |
2 teaspoons vanilla |
1 1/2 cups ice water |
3 1/2 cups cake flour (sifted) |
4 egg whites (stiffly beaten) |
3 1/2 teaspoons baking powder |
Directions:
1. Cream shortening and sugar until light and fluffy; add vanilla. 2. Remove ice from water and add 1 1/2 c water alternately with sifted flour in 3 additions, beating well after each addition; add baking powder. 3. Fold in stiffly beaten egg whites. 4. Bake in three greased 9 layer pans (or one 9x14 pan) at 375 for 25 minute. 5. Do not overbake. 6. Frost with your choice of frosting or Cool Whip Frosting. |
