Thses are just quick and easy to do, and great for kids to make up also. A little piece of fruit or berries, or cake decorations can also be put on top to decorate up a bit - just great to have fun with!! Gelato can also be used in place of ice cream in this recipe.
Ingredients:
24 small cupcakes, mini sized
4 pints ice cream, slightly softened
Directions:
1. Trim domes off cupcakes to create flat tops if necessary. Using a 1 1/2 inch icream scoop, press a scoop of ice cream on top of 1 cup cake. Repeat with remaining cupcakes and ice cream.
