Ice Cream Blueberry Muffins |

I haven't tried these yet, but as soon as I can find fresh berries I plan to. Ingredients:
2 cups vanilla ice cream, softened (1 pint) |
2 cups sifted self-rising flour |
3 tablespoons sugar |
1/2 teaspoon cinnamon |
1 1/2 cups blueberries, rinsed and drained |
Directions:
1. Combine ice cream and flour; stir until batter is smooth and thick. 2. Mix sugar and cinnamon, set aside 1 tablespoon. 3. Sprinkle remaining mixture over batter. 4. Gently fold in blueberries. 5. Fill greased or paper lined muffin cups 2/3 full. 6. Sprinkle with reserved sugar-cinnamon mixture. 7. Bake in 400F oven for 20-25 minutes. |
