A different take on the traditional fruitcake(that I can't stand). This is my cousin, Carols' recipe. It's is absolutely delicious...... Ingredients:
2 sticks of butter |
4 cups of chopped pecans ( can use walnuts) |
1 lb. box of raisins, chopped |
1/2 lb. or 1 1/2 bags of marshmallows( small ones) |
8 oz. of red candied cherries, chopped |
8 oz. of green candied cherries, chopped |
1/2 lb. or 1 1/2 packs of graham crackers that has been put through the food processor to make it into crumbs. |
Directions:
1. Melt marshmallows over double boiler with the 2 sticks of butter until creamy 2. Add the rest of the ingredients, mix well 3. Mixture will be stiff 4. Place mixture into a greased loaf pan. 5. Make sure to pack it into the pan 6. Place in refrigerator overnight. 7. Slice and enjoy! |
