The local bakery makes these and they are fabulous. They have been making them for over 60 years and they are the first cookies that go every morning. ***These do have to be refrigerated before baking for at least 8 hours*** Ingredients:
1 cup butter |
2 cups brown sugar |
2 eggs |
3 1/2 cups all-purpose flour |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 teaspoon vanilla |
1 cup pecans, finely chopped |
Directions:
1. Cream butter and sugar. 2. Add eggs. 3. Add all dry ingredients, then vanilla and pecans. 4. Mix well. 5. Roll this mixture into 2 rolls. 6. Wrap in wax paper and refrigerate for at least 8 hours, preferably overnight. 7. Once the cookie dough has been refrigerated for the proper amount of time, unroll from the wax paper and slice into 1/4 inch slices. 8. Bake at 425 degrees on a cookie sheet lined with parchment paper for 7-10 minutes. |
