I love Mexican food, and living in Southern California affords me the luxury of getting fresh ingredients year round. Purchased salsa is just never as good as homemade. This is a loosey-goosey recipe, because you can use more or less of all ingredients, depending on your taste. Read more . If you don’t have a food processor, finely dice all ingredients and consider blanching the tomatoes and removing the skins. Ingredients:
8 to 10 plum tomatoes, coarsely chopped |
3 to 4 garlic cloves, chopped in half |
1/2 bunch of fresh cilantro, coarsely chopped |
1/4 to 1/2 jalapeno, diced |
1/4 bell pepper, diced |
1/2 red onion, diced |
1 tbsp. olive oil |
juice of 1/4 to 1/2 fresh lime |
salt and pepper to taste |
Directions:
1. Put cilantro, garlic, jalapeno, bell pepper and onion into food processor. 2. Pulse until finely processed. 3. Remove from processor and set aside in a medium bowl. 4. Add tomatoes to processor and pulse until tomatoes are to the texture you prefer: i.e. chunky versus minced. 5. Put tomatoes into bowl of cilantro mixture and stir all ingredients together. 6. Add olive oil and lime juice. Salt and pepper to taste. |
