Delicious german chocolate cake with nuts in the cake and in the frosting! Worth the effort! Ingredients:
4 eggs |
3/4 cup butter |
1-3/4 cups all purpose flour |
3/4 cup pecans,toasted & ground |
1 teaspoon baking soda |
1/4 teaspoon baking powder |
1/4 teaspoon salt |
2 cups sugar |
1 4-oz pkg. sweet baking chocolate, chopped, melted & cooled |
1 cup buttermilk |
1/2 cup strong coffee or water |
****coconut pecan frosting |
2 eggs |
1-1/3 cups half & half |
1-1/3 cups sugar |
1/2 cup butter |
7-oz package (2 2/3 cups) coconut |
1 cup chopped toasted pecans |
Directions:
1. Separate eggs. Let eggs & butter stand at room temperature 30 minutes. 2. Preheat oven to 350 degrees F 3. Grease bottoms of three 9-inch round cake pans 4. Line with waxed or parchment paper; grease & flour bottoms & sides 5. Set aside 6. In large mixing bowl, beat egg whites until stiff peaks form; set aside 7. In medium bowl, stir together flour, pecans, baking soda, baking powder and 1/4 teaspoon salt 8. In 4 quart bowl, beat butter on medium high for 30 seconds 9. Gradually add sugar; beat until light & fluffy 10. Add egg yolks one at a time, beating well after each addition. 11. Beat in chocolate on low 12. In bowl, combine buttermilk and coffee 13. Alternately add with flour mixture to butter mixture; beat well after each. With spatula fold in egg whites. 14. Spread batter in pans 15. Bake 25 minutes or until toothpick inserted in center tests done. 16. Cool in pans 10 minutes. Remove and peel off paper 17. Cool on wire racks 18. *******Coconut Pecan Frosting Directions****** 19. In saucepan slightly beat 2 eggs. 20. Stir in 1-1/3 cups half & half,1-1/3 cups sugar and 1/2 cup butter 21. Cook and stir over medium heat 10 minutes, until slightly thickened and bubbly. Remove from heat, stir in 7-oz package (2 2/3 cups) coconut and 1 cup chopped toasted pecans 22. Cover and cool 23.
