I Can't Believe It's Low Fat Creamy Potato Salad |

The name says it all. You have to try it to believe it! Ingredients:
6 medium round red potatoes |
1/4 chopped green onion |
1 (2 ounce) jar diced pimentos, drained |
1/2 cup fat-free mayonnaise |
1/4 cup plain low-fat yogurt |
1/4 cup low-fat sour cream |
1 tablespoon sugar |
2 tablespoons prepared mustard |
1 tablespoon white wine vinegar |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1/2 teaspoon celery seed |
1/2 clove garlic, minced |
Directions:
1. Cut potatoes into 1/2 pieces; place in medium saucepan. 2. Add water to cover. 3. Bring to a boil; cover, reduce heat, and simmer 15-20 minutes or until tender. 4. Drain and cool. 5. Combine potato, chopped green onion, and pimemto in a large bowl; toss gently. 6. Combine mayonnaise and next 9 ingredients; stir well. 7. Add to potato mixture, tossing gently to coat. 8. Cover and chill. |
