Served along with fries and coleslaw at a Fish Fry. Ingredients:
1 3/4 cups cornmeal |
1/4 cup flour |
2 tsp. baking powder |
1 tsp. salt |
1 tsp. baking soda |
1/2 tsp. black pepper |
1 large onion finely chopped |
1 1/2 cups buttermilk or beer |
2 eggs, lightly beaten |
vegetable oil for frying |
Directions:
1. Combine cornmeal, flour, baking powder and soda. 2. Add salt and pepper. 3. Mix in onion, then stir in butterrmilk or beer and beaten eggs. 4. Pour oil 1/2 deep in heavy skillet. Heat oil til dough dropped from spoon sizzles immediately. 5. Drop dough by spoonsful into hot oil. 6. Cook over med. heat until puffed and lightly browned on one side, then turn and cook til browned on the other side. 7. Remove and drain on paper towels. 8. Cook remaining hushpuppies. |
