These always bring back some very fond memories. Served with either fried chicken or fried fish, they're the best!!! I use 2 teaspoons to form the shape but some people like using a cookie dough scoop. Ingredients:
1-1/2 cup corn meal (preferably white) |
1-1/2 cup boiling water |
1/3 cup milk |
1 tablespoon oil |
1/2 cup onion, finely chopped |
2 eggs |
1 cup all-purpose flour |
1/2 tsp. onion powder |
1/2 tsp. garlic powder |
1 tablespoon baking powder |
1-1/2 teaspoon salt |
1 teaspoon sugar |
note: these measurements can easily be halved. |
Directions:
1. Pour boiling water over the cornmeal and stir until a soft ball is formed. 2. Stir in milk, oil, and onion. 3. Beat eggs slightly, and add to the corn meal mixture. 4. Add flour, onion and garlic powder, baking powder, salt, and sugar. Beat by hand into a smooth batter and don't worry if there are a few lumps. 5. Preheat deep fat or oil to 374 degrees. 6. Drop batter by spoonfuls into the hot oil. 7. Fry until golden brown, turning only once. 8. Drain on paper towels. 9. Makes approximately 2 dozen, or more, depending on the size. 10. Serve hot. |
