This recipe goes with Country-Fried Catfish With Hush Puppies Ingredients:
1 2/3 cups cornmeal |
3/4 cup all-purpose flour |
1 tablespoon baking powder |
1 teaspoon salt |
1/2 teaspoon pepper |
1/3 cup chopped onion |
3/4 cup milk |
1/4 cup vegetable oil |
2 eggs, lightly beaten |
reserved vegetable oil |
Directions:
1. Combine cornmeal, flour, baking powder, salt, pepper, and onion in a medium mixing bowl; add milk, 1/4 cup vegetable oil, and eggs, stirring well. 2. Carefully drop batter by tablespoonfuls into deep hot oil (375°), cooking only a few at a time. Fry 3 minutes or until hush puppies are golden brown. Drain well on paper towels. Serve immediately. |
