This recipe card was very difficult to read because there are brown rings and a bit of something spilled on it, but I'm pretty sure I got everything right. or close to right :) Ingredients:
1 unbaked 8-inch pie shell |
1/2 cup butter (normal temperature) |
1 cup sugar |
2 eggs, separated |
1 1/2 teaspoons white cornmeal |
2 tablespoons heavy cream |
1/2 teaspoon vanilla |
1 dash salt |
Directions:
1. Bake pie shell in very hot oven (450 degrees F) for 10 minutes. 2. Cream butter, sugar, egg yolks, add corn meal mixed with cream and vanilla. 3. Fold in beaten white. 4. Pour into shell and bake 10-12 minutes. If top browns before filling is set, put a heavy piece of brown paper or foil over top and complete baking. 5. Serve slightly warm. |
