The bold aroma of this dish can be smelled form kilometers away through the African bush and always brings a smile to tired and hungry hunters faces. The deep red hue of the wine warmly reflects the African sunset at the closes on a long day in the bush. Ingredients:
.759 grams (1.750 lbs) game meat cubed (best kudu, impala or eland) |
marinade over night in red wine sauce (optional) |
salt and pepper to taste |
2 tablespoons olive oil |
parsley, bay leaves, thyme, rosemary |
500 grams (1 lb potatoes) (3 to 4 medium) |
2 cups finely shredded ‘morogo’ or wild spinach |
2 medium onions, chopped in quarters |
12 small spring onions (small bunch) |
11/2 cups sliced carrots |
fresh chopped parsley |
Directions:
1. Season cubed game meat with salt and pepper. [Drain wine marinade optional] 2. Heat olive oil in large saucepan it must hold all the meat in a single layer. 3. Brown on all sides. Spoon off any fat and add enough water [or half water and half red wine marinade sauce] to just cover the meat. 4. Bring to a boil and add parsley, bay leaf, peppercorns, thyme and rosemary enclosed in cheesecloth. 5. Lower heat and simmer. 6. Meanwhile, peel potatoes and shape into bite sized rounds [if in the bush bite sized cubes]. 7. Chop trimmings from potatoes into small pieces. Add potatoes, trimmings, onion, roughly chopped spring onions to game and liquid. Simmer 20 minutes then add carrots and ‘Morogo’ [wild spinach]. 8. Add a little more water if needed during cooking. Simmer 10 minutes more or until potatoes are tender. Correct seasoning to taste. 9. Garnish with parsley and serve on a bed of yellow rice. 10. Alternative: can be served with maize meal but this is traditionally African [very similar to Grits in America] 11. [‘Morogo’ is not readily available in shops as it is picked wild by knowledgeable harvester in the African bush; it has a rich slightly bitter taste and complements the game flavor of the dish; but not to worry wild spinach works just as well.] 12. WARNING: If you suffer from gout stay away from this dish you will suffer in the morning. 13. (A good woody Shiraz will complement the rich game taste) |
