A simple dish to eat with bread for dipping or as a salsa with grilled fish or chicken. Ingredients:
4 tomatoes |
2 onions |
4 red capsicums |
olive oil |
sugar |
salt |
pepper |
paprika |
Directions:
1. Place equal amount of tomatoes, onions and capsicum in olive oil in a roasting dish. 2. Season with sugar, salt, pepper and paprika. 3. Roast in oven over low heat 180 degrees C until caramelised and soft (approximately 20-30 minutes). |
