Served with crusty bread, this is a delicious, filling and comforting soup for cold weather. Ingredients:
4 onions, peeled and chopped |
2 cloves garlic, crushed |
1/2 cup salad oil |
3 tbsp. paprika |
3 lb. lean beef chuck, cut into cubes |
2 tomatoes, peeled and chopped |
4 potatoes, peeled and cubed |
2 tsp. caraway seeds |
1 1/2 tsp. marjoram |
1 tsp. minced lemon peel |
8 cups water |
2 tsp. salt |
1/2 tsp. pepper |
Directions:
1. Sate onions and garlic in a large soup kettle. Stir in paprika, cook 1 minute. Wipe dry beef cubes and brown. Add tomatoes, caraway, marjoram, lemon peel, water, salt and pepper. Bring to a boil. Lower heat and cook slowly, covered until meat is tender (45 to 60 minutes). Add potatoes and continue to cook about 20 minutes longer, until potatoes are tender. |
