My mom has made this for Thanksgiving every year and we always look forward to it. It is an old stand by with lime and lemon jello, pineapples and marshmallows. Ingredients:
3 ounces lemon jell-o gelatin |
3 ounces lime jell-o gelatin |
2 cups water |
20 ounces crushed pineapple |
23 large marshmallows |
16 ounces small curd cottage cheese |
8 ounces cool whip |
1 cup pecans, chopped |
Directions:
1. Bring 2 cups water to a boil. Dissolve jellos and boil for 2 minutes. Add pineapple and boil 3 minutes. Remove from heat. 2. Add 23 large marshmallows (don't know why it has to be exactly 23 but that is what Mom does). Dissolve. Cool until partially set. 3. Add cottage cheese, whipped cream and chopped pecans. Pour into 13x9x2 pan. Chill until well set. |
