Ingredients:
1 (15-ounce) can chickpeas, rinsed and drained |
1 cup sun-dried tomatoes in oil, drained |
1 garlic clove, chopped |
1/2 cup mayonnaise |
1/4 cup freshly grated parmesan cheese |
2 tablespoons lemon juice |
1/4 teaspoon dried basil |
1/8 teaspoon ground red pepper |
Directions:
1. Process all ingredients in a food processor until smooth, stopping once to scrape down sides. Serve with olives and toasted pita bread. |
