This is a recipe that is a staple in our home. We gave up the chips and dip a long time ago and replaced the old snack foods with healthier versions. It's very quick and easy to whip up with ingredients from your pantry and kids love it. Served with fat-free pretzels or flat bread, it makes a healthy, low cal, low cost snack. Ingredients:
1 (15 ounce) can chickpeas |
1/4 cup reserved bean water |
3 tablespoons peanut butter |
1 tablespoon olive oil |
2 tablespoons lemon juice |
1/2 teaspoon salt |
3 -4 garlic cloves |
1/2 teaspoon garlic powder |
fresh cracked pepper, to taste |
1 tablespoon dried parsley |
Directions:
1. Place all ingredients into food processor and pulse until it reaches the desired consistency. Some people prefer a smooth consistency- I like to leave it a little chunky. Serve with pretzels, flat bread, crackers or whatever you like. |
